The acidity level (pH): with the lactic acid, the pH is equal to 4.30 or lower. With this treatment, we prevent the proliferation of bacteria which would have survived pasteurization. We preserve the juice’s taste, aroma and vitamins.
The pasteurization process: because of the low acidity level (=4.30) pasteurisation is a short process, which takes 25 to 35 secondes at 85°C. No sterilization at 120°C is used, which alters the vitamines and other active elements contained in the fresh vegetables.
