Carrot and sweet potato soup

Ingredients

Carrot and sweet potato soup

  • 5 medium carrots, cut into 1-cm coins
  • 3 sweet potatoes, cut into pieces
  • 1 onion, coarsely chopped
  • 2 tbsp of FCP olive oil
  • 1 bay leaf
  • 2 garlic cloves, crushed and finely chopped
  • 1 tsp of herbes de Provence
  • 6 cups of Herbamare® vegetable broth
  • Herbamare® Original and pepper to taste

  • High in dietary fibre

It’s well known that carrots are good for the eyes but did you know they are natural pain relievers as well? Carrots have anti-inflammatory properties which can help ease aching muscles & joints and other inflammatory conditions.

How to make Carrot and sweet potato soup

1. Brown the onions and garlic.

2. Incorporate the other ingredients, cover and cook over low heat for about 30 minutes.

3. Purée the soup in the food processor until it reaches a creamy consistency.

4. Enjoy!
