Greek Lentil Salad

  • 1 cup dry lentils
  • 2 cups cherry tomatoes
  • 1 clove garlic
  • 1/4 small red onion
  •  1 handful fresh parsley
  • 1/2 cup feta cheese
  • 1 tsp Herbamare Original
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • Pepper to taste

Lentils are a great way to get nutrients in your body. They are easy to prepare, readily available and very versatile. Get creative when mixing ingredients.

How to make Greek Lentil Salad

1. Cook lentils in water as per instructions on package. Add 1/2 tsp of Herbamare to cooking water.

2. Prepare ingredients for dressing by mixing garlic, 1/2 tsp of Herbamare, lemon juice and olive oil. Mix in small bowl and set aside.

3.  Prepare ingredients for the salad. Cut cherry tomatoes in half. Finely chop parsley. Finely chop onion. Crumble feta cheese and place all ingredients in a mixing bowl.

4. Mix in lentils when they are ready along with the dressing and some pepper to taste.
