Lentil Shepherd's Pie

This vegan and gluten free Shepherd's Pie makes the perfect weeknight dinner! Packed with wholesome ingredients like lentils and carrots, it's a quick meal that the whole family will love.

Ingredients

Lentil Shepherd's Pie

  • 2 cups of cooked lentils
  • 1/2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 medium carrots, diced
  • 1 stalk celery, diced
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp brown sugar
  • Herbamare® Original and pepper to taste
  • 2 tbsp tomato paste
  • 2 tbsp Natur® tamari sauce
  • 1 tbsp balsamic vinegar
  • 1/2 cup Herbamare® broth
  • 1/2 cup peas (frozen or canned)
  • 1/2 cup corn (fresh, frozen or canned)

Mashed potatoes

  • 2 pounds of potatoes
  • 1/3 cup unsweetened almond milk
  • 2 tbsp vegan butter or vegetable oil
  • 1/2 tsp nutmeg
  • Herbamare® Original and pepper to taste

Lentils are a great way to get nutrients in your body. They are easy to prepare, readily available and very versatile.

How to make Lentil Shepherd's Pie

1. Mash potatoes:
- Peel and chop potatoes, place in a pot with salted water and bring to a boil. Cook on medium heat for about 15 minutes or until tender. Drain.
- Transfer back to the pot, add butter, milk, nutmeg, pepper and Herbamare to taste and mash potatoes.

2. In the meantime, heat oil in a skillet over medium heat, add onion, garlic, carrot, celery, and all spices (onion powder, thyme, rosemary, sugar, Herbamare & pepper). Cook for about 5 minutes.

3. Add tomato paste, tamari sauce, balsamic vinegar and stir to combine.

4. Add cooked lentils, corn, and peas and pour in Herbamare broth. Cook for 5-7 minutes.

5. Preheat oven to 390°F.

6. Spoon the lentil mixture into a baking dish ( 9" square or oval baker should do). Spoon the mashed potatoes over the lentil mixture. Pat everything down together.

7. Bake for about 15 minutes, then broil for a few minutes to get it golden brown on top.
