Pumpkin, carrots and ginger soup

Comfort soup rich in in beta-carotene! Not only is it budget friendly but it is also nourishing, packed with antioxidants and very simple to make.

Ingredients

Pumpkin, carrots and ginger soup

  • 1 tbsp (15 mL) Olive oil
  • 2 cups (500 mL) Chicken or Herbamare® vegetable broth
  • 4 cups (1L) Pumpkin flesh, coarsely chopped
  • 2 Garlic cloves, peeled, coarsely chopped
  • 2 Small onions, coarsely chopped
  • 3 Carrots, sliced
  • 2 tbsp (30 mL) of fresh grated ginger
  • Herbamare, pepper to taste
  • Olive oil
  • 1 teaspoon of cumin
  • optional: fresh celery leaves

  • High in dietary fibre

It’s well known that carrots are good for the eyes but did you know they are natural pain relievers as well? Carrots have anti-inflammatory properties which can help ease aching muscles & joints and other inflammatory conditions.

How to make Pumpkin, carrots and ginger soup

1. Brown garlic and onion in olive oil until golden.

2. Add the pumpkin flesh, carrots and sauté 5 minutes.

3. Cover with broth. Add 2 tbsp (30 mL) of fresh grated ginger to the broth. Bring to a boil and let simmer for 20 minutes.

4. Season with Herbamare® Original and pepper. Reduce to cream and enjoy!
