Here is a super simple ratatouille recipe! Quick and easy with end of season vegetables, fresh zucchini, eggplants and tomatoes from the garden… and of course Herbamare sea salt.

Ingredients

Ratatouille

  • 4 tomatoes, cut into thin slices
  • 2 zucchini, cut into thin slices
  • 2 yellow onions, cut into thin slices
  • 2 small eggplants, cut into thin slices
  • 2 cups of tomato sauce
  • 1 tbsp. of dried basil
  • 1 tsp. of dried thyme
  • 1 tsp. of dried oregano
  • Herbamare Original and pepper, to taste.
  • Olive oil drizzle
  • About ten fresh basil leaves

Herbamare® Original

Herbamare® Original is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.

How to make Ratatouille

1. Preheat the oven to 350° F.

2. In a deep baking dish, pour the tomato sauce, the dried herbs and the Herbamare and pepper.

3. Spread the vegetable slices in random alternation, making them stand upright, going around the dish to form a spiral. Do this until all the vegetables are gone

4. Drizzle olive oil on top, with more Herbamare and pepper.

5. Bake for at least an hour, or until the vegetables are tender.

6. Bon appétit!
