Vegan Mac n' Cheese

You won't believe this mac n' cheese is vegan. It's rich and creamy, but without the dairy! It has a bunch of hidden veggies and you're going to love it.

Ingredients

Vegan Mac n' Cheese

  • 350 g gluten free macaroni
  • 1 big potato peeled
  • 1 sweet potato
  • 1 carrot peeled
  • 1/2 cup cashews
  • 1/2 cup canned coconut milk
  • 1/2 cup Herbamare broth
  • 1/2 small onion
  • 2 garlic cloves
  • 4 tbsp nutritional yeast
  • 1/2 tbsp lemon juice
  • 1/2 tsp Herbamare® Original seasoning salt
  • 1/3 tsp black pepper
  • 1 tsp onion powder

Coconut milk is rich in many essential vitamins and minerals, including iron, manganese, calcium and magnesium. Coconut milk is also a great source of natural energy and can also help improve digestion.

 

How to make Vegan Mac n' Cheese

1. Soak cashews in warm water for about 15 minutes or until they start to soften.

2. Cut potato and carrot and boil in hot water with Herbamare Original (or salt) for 10-15 minutes or until soft.

3. Boil the pasta according to the directions on the package.

4. Add all ingredients (except pasta) into blender or food processor and blend until smooth.

5. Heat sauce in saucepan for a few minutes.

6. Add in your pasta and enjoy!
