This recipe is a flavourfull side dish that is good to serve for your Holiday meals. They are addicting!

A medium baked potato contains about 45% of the Recommended Daily Intake of Vitamin C. Vitamin C is important for your immune system, helping to fight infections such as the common cold. Potatoes used to be eaten on ships as a preventative against scurvy.

How to make Greek Potatoes

1. Preheat oven to 375°F. Wash potatoes and cut into 1 cm thick slices. Place on baking sheet evenly.

2. Zest the 1/2 lemon and put aside for later. Cover potatoes with olive oil, ghee, paprika, rosemary, garlic powder, juice from the 1/2 lemon, Herbamare veggie broth, Herbamare aromatic salt & pepper. Mix together.

3. Place baking sheet in oven and bake for 40 minutes. Then flip the potatoes and cook for another 20-40 minutes, depending on how cooked you like them.

4. Serve topped with lemon zest and parsley.
